Don't get me wrong; those are my personal preferences as well. There are certain properties that came to me at the right age in my youth and presented themselves exactly how I needed them to at the time; but now that I'm a grown man, I like a little more spice in my soup.
There are many things in life where I'd prefer to have it my way than to be right, and this is one of them. However, I'm basing my opinion on Nintendo's trends with remaking/rereleasing old games on newer hardware.

Graphically, a similar level of production value would be amazing.
Gameplay wise, I feel like Ocarina as a more complex game than Starfox has aged a bit more and could benefit from more tweaks.
Interesting that the character art deviates from the redisgns in the Mario movie, great visual presentation overall but the limited expression of the redesigns make me think this maybe wasn't developed in-house?
Honestly this doesn't feel like it needed another remake, an outright reboot would of been more welcome but after watching the Prologue with Foxes Dad, it makes me think they're using this as a smaller scope project to set up the proper sequel.

Extrapolation/speculation but now we have seen SF64 remake, I think OoT will be a very faithful remake. Improve graphics, sound, some QoL, expand story. But I think the theory of a complete reimaging will be out of scope. I think it will be faithful to the original.
