Super Mario All Stars for the SNES. A collection of great games now included being able to save progress, keeping the great play ability of the NES originals with even more vibrant colours.

This is a great example. 
The feeling of the games vary a bit so if one is used to play the original versions the All Stars versions of at least SMB3 is not as snappy. 

The complete upgraded graphics and added save functions was such improvements that one could use it as a gold standard for remakes. 

Also need to mention the fun battle mode that was added as well, and the first release of the second Super Mario game outside of Japan. It was a great compilation of remade games for the new hardware.

Yes(…?). For instance, I’ve never played a single PS1 game, but the original Spyro and Crash trilogies have a certain charm to their visuals and presentation that really make them special.

Not a remake, but yes a mess.

The best ones are Black Mesa, FF7, the Resident Evil ones and the 3DS Zelda games.

The "worst" ones are in my opinion the ones that make you go: is this even a remake? Until Dawn is the worst offender I can think of.

Tony Hawk's Pro Skater 1-2. Looks great, still controls as tightly as the originals (or in the case of THPS1, even better), has more characters and more stuff to do etc. It was a shame to lose some of the music and secret characters, but overall it was a great success.

Eh. It’s a stretch to call 3D All Stars a remake. That’s more a re-release with some QoL enhancement. BDSP is a very solid choice for weakest though.

Thats a completely different statement than the one you made about super mario rpg. Whatever though. 

Recently, I’ve really enjoyed FF7 Remake and Dragon Quest 2 HD2D (which I feel improves significantly more than the other two games… really the DQ1&2 collection was DQ2 with part 1 tacked on… DQ1 had significant improvement and updating, but the sheer volume of improvements on 2, plus the character interaction, really gives this game a shine worthy of the current era, and it is by far my favourite of the trilogy.

The only remake I didn’t really like was the remake of MGS that tried to turn it into an MGS2 style game. It felt like a massive downgrade over the original, lacking the emotion or visual artistry of the original. Example, the icy parts just felt foggy, the original game had the graphics look actually cold!

For good ones, I'll give a shoutout to Project Zero/Fatal Frame 2 Crimson Butterfly on Wii.

Masterfully spooky adventure that reinvents the 2002 original while remaining faithful.

Metroid: Zero Mission is such a stellar remake it's the ideal starting point for someone that wants to try the Metroid series. While I do appreciate the original it has aged badly so if someone wants to try it I'd always recommend the remake over having to suffer through stuff like grinding to get your health back when you die. The original comes with the remake thankfully so I would recommend playing it afterwards as a curiosity and going as far as you can in it till it gets too annoying.
