Gothic Remake - it retains all the charm and overall design of the original (well, for people who like "you're no hero and world doesn't give a shit about you" approach to RPGs), while having modern visuals and gameplay improvements.

These two have more or less the same difficulty and content as the original versions, though, with some extras even. The Mario RPG remake is significantly easier and it's missing some OG content (due to rating issues, but still).
