You should just say "A Final Fantasty" and free up two of those slots and... stop worrying about pissing off fans. Definitely Parasite Eve from that list, Metal Gear would be my next choice. Outside of Sonic Generations, 2.5D is never attractive so unless Symphony of the Night is HIGH quality HD 2D, then knocks down the ladder.

Final Fantasy IX is my favourite game of all time, so I guess that would be the obvious choice, but I don't really think it needs a remake. I wouldn't complain if it did get one, but The Legend of Dragoon would be my #1 pick.
