Final Fantasy IX, for sure. But just update the graphics, no full overhaul.

Those would be my two choices. Brad will attack me for this, but Legend of Dragoon is no classic. The game was pedestrianly received during its hey day, and it still boggles my mind that it gained a loud cult following in the following decades lol
I'd go for Metal Gear Solid as my main option.
I'd be okay with Syphon Filter as long as the gameplay is changed.
Also another game that needs to be remade is Driver. It'll prove to be really hard to make four sizable cities to fit all the missions and not make them look small.

THIS! Touted as a "Final Fantasy Killer" I was really underwhelmed by everything except the graphics and music. Most of all, the story and characters. Translation was appalling. But hey, if others enjoyed it, that's great...I just wonder how many younger people just heard it was good and latched on to that.

Yes, I agree. The game had high production values, but it was lacking in several areas, including story, and a terrible Overworld design. The combat was okay. I felt it was an average RPG with a great coat of paint. Inspired mostly by FF sales, than by what actually made FF great. I remember EGM, one of the reviewers even handed he game a 5.5 score. It was really an average JRPG at the time, this was further reinforced by contemporary releases of Chrono Cross and FFIX. I feel most of its fans never really got to play most of the RPGs of the era.

Yeah, I don't get it either. It's very run of the mill in what I played. Perfectly mediocre JRPG. Xenogears and FFIX are really fine examples of the genre. Xenogears is incomplete and a remake could complete it. I can see an argument FFIX maybe doesn't fully need it. Xenogears I believe does.
LoD, Syphon Filter or Twisted Metal.
I feel like these games would address current holes in the SIE portfolio.

Yes that second Disc in Xenogears was flat out rushed. FFIX was the most polished of the PS1 FFs, it could be remade, but only a fresh coat of paint maybe. Somethings should be left untouched, but I wouldn't mind something like the old RE GC remakes, with redone HD backdrops and most of the processing power going to character and overworld rendering. Honestly, I think Xenogears has the most potential.
Metal Gear Solid, without even thinking.
