Over 100 games in 5 years, with this type of output, would Nintendo be able to pretty much support themselves? They would still likely get Japanese support, indies and kid friendly western titles as well so with a unified concept would Nintendo need AAA support to have a healthy release schedule and sell well?

Short answer - yes. At least for Nintendo fans it would be OK.

But they'd need more diversity than that. But since they don't have to make 2 Smash Brothers, 2 Mario Karts, 2 Mario 3Ds, 2 Mario 2Ds, etc. per generation ... they could free up teams to work on new ideas/concepts too.

They could but it depends on how they handle it.

I am pretty sure they will have exclusive games for both and not the whole, one game for both platforms

Nintendo almost always only support themselves. If they make a profit, they can do it. Plus they got billions upon billions of dollars stashed away from the Wii and DS. So they could keep going for 10 years while not making a profit and still be fine.

they wouldn't go years without profit and want to stick with that plan.  They're here to make money not squander everything they've earned.  OT Nintendo could if they REALLY unify it.  Crossbuy on everything with less resolution or something on the portable version would be good.  That way, as has been said earlier, they can free up teams who made portable or console versions of their games previously since they'll only need one version for the system.  They may need to make some new IP and push them the same as their established stuff like Sony has done the last few years with Infamous, Beyond 2 Souls, The Order, and Heavy Rain.  Get the Jap support, get some third party deals like Bayonetta, get your first parties all on the same page and release 4 games a month at least for your system.  You got it.

I think they could support themselves with a unified platform. They would also get descent Japanese support. However, I still want them to try and get a bit more Western support.

I predict that the Wii U will sell a total of 18 million units in its lifetime.

The NX will be a 900p machine

I've been saying this for many years. Unified console = twice as many games for one console. It would solve alot of problems.

I never said they would stick to the plan. All I said is they have enough money to do it.

As your list shows, they have enough manpower to support their Fusion strategy. Of course, there's a mix between 1st party and 2nd party, but the point still stands.
Even if they just release 10 games every year, that's more than enough.

The more important question is: how will they support it? With what kind of titles?
The market has been showing them that they need to make more than just Mario, Zelda, MK, etc. They need to learn from 3rd parties and make those type of games. And making it Nintendo's style (like Splatoon) won't be enough.

Quantity is pretty much assured. The real problem will really be diversity and what type of diversity they will bring to their consoles.
