You talking about the 2000 demo, or the 2011 demo? They did make Twilight Princess in 2006 that looked just as "realistic/hardcore" as the 2000 Spaceworld demo. BOTW being more cartoony than the 2011 demo was probably a combination of the demo's graphics not being possible in an open world setting with so much going on, and Nintendo themselves said IIRC, the more stylized graphics fitting the world's cartoon logic/physics.

Would've been the 2000 demo. I don't remember seeing a hyper realistic version of TP. Didn't know that Nin had toyed with the idea again. Maybe Nin just might try a more realistic Zelda someday then. I'd still assume they wouldn't go hyper realistic, but more realistic than expected may actually be a possibility in the future perhaps.

I think the art style depends on how serious or lighthearted the game's overall theme is. Ocarina of Time, Majora's Mask and Twilight Princess were dark and serious, whereas Wind Waker, Phantom Hourglass and Spirit Tracks were a bit more goofy than not. I don't think the art style itself is a problem, but the theme that comes with the art style. Wind Waker was stylished game, but too light for an epic game where you're saving the world. Compare it to Pikmin that is colourful and cute in the same way, but theme is damn dark.

Things is, with a serious and/or evil theme/story, hyper realistic graphics might be great for adults (and teens), but might be going too far for kids. Whereas if Nin keeps the graphics stylish and vibrant, it would help to balance things out so as not to be too serious or too scary. The opposite probably wouldn't work well at all, if Nin decided to use hyper realistic graphics but with a silly light hearted theme/story. Having a more serious well told story is more important I'd say, so balancing that with the graphics and gameplay however necessary makes more sense to me.

I don't mean it's necessary to sell well and succeed for teens and adults, it's just that a dark gritty serious theme with hyper realistic graphics would be an easier sell to them vs kids. The fact that more stylish graphics and fun lighthearted gameplay can also easily be sold to teens and adults, along with kids, would probably make Nin lean that direction, with a more (dark, gritty, serious) well put together theme/story.
