Yes, Nin does dabble in realism at times, but never goes hardcore. It looked like that was the approach for that old Zelda demo, but being Nin they decided against it. Like RDJ says, never go full realism!

You talking about the 2000 demo, or the 2011 demo? They did make Twilight Princess in 2006 that looked just as "realistic/hardcore" as the 2000 Spaceworld demo. BOTW being more cartoony than the 2011 demo was probably a combination of the demo's graphics not being possible in an open world setting with so much going on, and Nintendo themselves said IIRC, the more stylized graphics fitting the world's cartoon logic/physics.
