Yeah, I always hear souls design being praised as some new thing but I just think, what about Crash Bandicoot? Wasn't that souls before souls, hell even the apples are sort of like souls.

Souls, at least to me, is a prettier NES game.  Punishing levels, tough bosses and limited check points.

I think the praise is because most of gaming was going accessibility and souls went in the other direction.

Exactly. That's why Demon souls was such a shock to people, every game at the time had an easy mode, QTE sections for major events, automatic saving. Souls just Brought back Medroid Vania and done it well... aside from Demon souls, which I still believe the original game is way too janky to be held in such high regards.

Freedom Planet feels right out of a SEGA Saturn game.

Eiyuden Chronicles. Octopath Traveler series and Bravely Default II. Feel like a wonderful nod to PS1 RPGs.

Blade Stranger reminds me of some Japan-only Saturn fighting games.

Blazeblue Crosstag is a PS2 fighting game in a good way.

Games purposely made with that intention in mind, like Unicorn Overlord, Eiyuden Chronicles, IamSetsuna, the Octopaths and such.

And in general the DQ franchise, since it never quite changes much with every new entry, at least gameplay-wise.

Ive played all of these and I love them. They are great homage to classic games, and really good games themselves.

Godfall is a bad game that feels like a PS2 game unintentionally and a bad one at that.

Hi-Fi Rush feels like a game of old but can't quite pinpoint exactly what kind of game I can compare it to lol. Pizza Tower is another one though. Fantastic platformer that blends 90s Nicktoons art style with games like the Wario Land series.

Hi Fi rush is DMC with added rhythm mechanics but everything else about the game is straight out of Devil May Cry. Level design. Style meter. Can't progress until the battle is over. Minor puzzle platforming. Combat is not as in-depth as DMC but few things are.

Cruis'n Blast is a glorious throwback to the arcade racers of the 90s and is dated in the best possible way

Stardew Valley. If you muddy the resolution and textures, I could see it as a PS1/Saturn release or even DS. Shoot, the full game today with all the updates would still be able to fit on a couple of CDs even with modern resolutions. I could see it fitting on one CD on older hardware. The game was clearly influenced by SNES and PS1 Harvest Moon/Story of Seasons games.
Certain licensed games in the last few years like Jumanji: The Video Game and Avatar: The Last Airbender - Quest for Balance. They feel like PS2 games.

Earth's Dawn. It feels right out of the PS2/Wii era of Vanillaware. Tho it has a sci fi setting. Combat is not quite as good tbh. It's a fun game with some minor faults.

Souls series. Death has repercussions, which most older games don't have. Most games have simple check points, souls kicks you back to last bonfire and the player needs to transverse large parts of the level.

Err, what?  Old games started your butt back at the beginning of the game.  You almost can't have more repercussions than that short of a death erasing the game cartridge itself.
