Without kinect most of those features would be impossible.

It will come with every Xbox One, so I have no problem if it is a requirement anyway.

The difference being that the Wiimote wasn't on a lowpowered state and could see me. They claim "strong privacy protection" but the PSN hack of 2011 is still fresh in my mind.

I'm sure Microsoft learned to safe guard PSN better...wait!? You lost me...

Ah, I see. You must be concerned about ratters. Fret not, for Xbox is a closed platform, and you should be perfectly safe from their beady little eyes.

M$ themselves spying on you, however... well, I guess you could always cover Kinect's "eye" and stuff it's "ears" when you're not using it, if you're really that bothered by that idea.

If it wasn't included with every Xbox One, then that would be a serious problem. However, every single One will have a kinect with it so that should be a non-issue.
