I think it would add more depth to the horse and make it more life like instead of just using it as a car or mc. i would like to have an eagle on my side while riding which i can send up in the sky and use the game pad to view the lands from up above and spot enemies and find the right road. a dog would be nice to have to track stuff/people/monsters.

a lot of things can be added to Zelda without ruining the formula and just make it richer!
