Nintendo has long been making easy Super Mario games that anyone can play. Super Mario Galaxy 1 and 2 were genuinely difficult, while easy games like Odyssey sell better.

Honestly, I'd be a bit let down if Mario Galaxy 3 wasn't the next 3D Mario release, especially with parts 1 and 2 getting re-released and the upcoming movie being the "Super Mario Galaxy Movie". To me it makes logical sense for the new game to be a continuation of that.

This makes another game in the series a bit tricky, but maybe Nintendo finds a way to do it - if they want to that is!

The same thing already happened in Super Mario Galaxy 1, so SMG2 did a retcon. Continuity or lack thereof has never been an obstacle for Nintendo.
Another example is Hyrule Warriors: Age of Calamity where you'd first expect to play a prequel to Breath of the Wild with different gameplay, but Nintendo goes the route of alternative universe to have the good guys win, as opposed to them losing and setting up the event chain that led to BotW.
Legend11 correctly predicted that GTA IV will outsell Super Smash Bros. Brawl. I was wrong.
Before the movie announcement, I would've said no. But with the movie and ports of the Galaxy games, it's more likely than not.
I think we're going to see a hybrid concoction of the Galaxy games, Odyssey, and some new elements.

Not interested in the movie, but I'd be all for a 3rd Galaxy game, especially if they can make it as charming as the first. Guess I'd have to buy a Switch 2 then.

Nah. I don't think Nintendo will risk get players fed up of the Galaxy games. We're already getting Galaxy 1 + 2, a Galaxy movie. By the time the movie is out of theaters, I think people will want new things, no more Galaxy stuff

you say this, but they followed a similar formula for DK: (i) DKCReturns HD in January, (ii) DK Country Amusement Park in May, and (iii) DKBananza in July.
I miss the days when a new Mario game meant doing something we've never experienced before.

What games are you thinking of? Only ones that fit that criteria in my mind are Super Mario Bros (NES) and Super Mario 64. SMGalaxy and SMOdyssey could also fit that criteria: the former introduced 360 degree platforming with orchestra scoring, the latter gave birth to an entire subgenre of platformers (“Stylized Platformers”). Even SMBWonder could fit that bill, focusing less on the actual platforming and more on spectacle and “Wow!” factor.
