Well, not sure if they actually can.

At the end of Galaxy 2, the entire Mario Galaxy got swallowed by a massive black hole; in other words, there's no Galaxy left for another game continuing the story after Galaxy 2, but a interquel would would still be possible.
This makes another game in the series a bit tricky, but maybe Nintendo finds a way to do it - if they want to that is!
