They fell behind on the most basic of basic things while the competition outpaced them and that's why I feel FromSoft might get left behind on animations and just basic stuff. In Bethesdas case they downgraded a lot over the years to make things more accessible too, so I guess it's not a great comparison.

This is why I was saying that you could argue it either way, depending on what you focused on.
But I would also argue that most of these things don't matter in the grand scheme of things. Elden Ring is beaten by Horizon 2, The Witcher 3, in a lot of technical matters, and it didn't matter. Elden Ring objectively has a ton of technical issues, UI issues, animation deficits, tons of reused assets. Yet scored higher than either of them, and was one of the fastest selling games ever.
From Soft games have never been the ones to push technical limits. Plenty of Sony first party titles, practically look a generation ahead of From Soft. From Soft is not making anything like the animations that Naughty Dog has been for a while.
These kinds of things might matter to people like us on gaming forums, but they don't seem to matter to most people. If it was that important, Demon's Souls remake would have sold 10x what Elden Ring did, instead of the 20x (and increasing) the other way around.
