Gears of War. I was hoping Microsoft would come up with something more original than another SyFy shooter since they already had Halo to be the 360's flagship title.

Too many games to list. So I'll just mention franchises that I've played but didn't find them that appealing to me.
Elder Scrolls
Fable
GTA
Killzone
Halo
I don´t like GTA V and Call of Duty Ghosts. Ok, they´re gorgeous and big and all, but for me they are just.... boring.

Despite liking RPG's, there a quite a few big ones I was never a big fan of. Final Fantasy 7 felt like a step down from the SNES games and only added some quickly dated cutscenes (seriously, they looked bad by the early PS2 era) and Skyrim felt dull compared to Fallout: New Vegas (though I still need to give SKyrim more time before completely writiing it off).
I like Ocarina of Time, but feel the rest of the 3D Zelda series is a tad overrated. I prefer A Link to the Past and A Link Between Worlds to Wind Waker and Twilight Princess. The latter games were designed in a way that made you feel like it took forever to progress, compared to the frequent encouragement of, say, LBW, where you could easily accomplish major things every half an hour.
I think the newer Mario games are generally better than their older equivalents. I haven't played enough of SMB3 to judge it fairly (I want time and energy to study it in depth), but I prefer the "New" subseries to the original SMB and World, and I prefer Galaxy and 3D World to Super Mario 64.
Braid. I understand that game was a turning point in indie games being treated seriously, and I appreciate the final sequence in particular, but overall I thought it was a dull game with repetitive puzzles despite its brevity that suffered from hubris.
I think God of War has good combat, great bosses, and an interesting art direction, but find the puzzle solving and platforming to be simple at best and distracting at worst. I never liked the stories they told either. Also, Kratos is overrated as a character.
I also dislike most fighting games. I should not have to memorize a list of input combinations in order to figure out how to do cool stuff. Smash Bros did it right in 1999, sacrificing a bit of depth for a metric ton of transparency, and due to its platforming elements, items, and complex stages, was never too simple anyway. Why can't the "serious" fighting games take a cue from Smash Bros?
I personally divide the Resident Evil series into three parts: the games that play like garbage and are cheesy, the games that forgo their horror roots and are cheesy, and the games like RE4 and Revelations that actually find a comfy cheesy middle-ground. Cheese is seemingly inevitable. Problem is, most of the series falls under the first two categories.
Well, that's enough for now. A mob appears to have mobilized outside my door, and I can't keep them waiting.
COD
Uncharted
TLOU
GofW
GOW
DK
StarFox
And big list...
