A combination of a RPG, FPS, 2D platformer, 3D platformer, racing and action-adventure, I will call it RF23DPRAA
Nintendo and PC gamer

Naturally I want to make an adventure, as this genre is badly represented at the moment. If I would be able to make great games like Monkey Island (the first one), Indiana Jones 4 or Day of the Tentacle, I would make such stuff all the time.
I would make a game like Frontier Elite with fully realized planets to explore and a story arc spanning the galaxy. Think GTA mixed with Mass Effect mixed with the space trading dynamics of Elite, all set in the universe of Firefly.
Procedural world generation will be crucial for this.
FPS. Preferably a zombie survival game where it's all about teamwork and helping each other out. I wouldn't add any unlockable weapons or anything though (in my opinion only new visual appearances should be unlocked) since I like to keep it simple, and I don't want to give further advantages to the already more experienced players.
I'd like to make an RPG, but considering how so would everyone else, I need to think of something better.
Hmm... what about a survival game? Like, let's say you're a baby eldritch abomination that has to survive in a typical Midwestern suburb or something? You'd have to scavenge for food, seek shelter, defend against people and wild animals, etc. It could be sort of like Fallout: New Vegas's Hardcore mode.
I am making a game right now and I've made several before. In the past I've made 2D shooters and platformers. Right now I'm making a Touch Game for mobile devises.
But if I had the resources and make a 3D adventure game. Similar in scope to a Zelda game, but probably not fantasy. Probably a light-hearted adventure with sci-fi roots. A little Zelda, a little Star Wars, and maybe some Disney thrown in for good measure. Something that all ages can enjoy.
