Guess some never heard of the expensive demo that was 1-2 Switch, it got similar reaction as Astro's Playground.
As you mention, pickings outside of Nintendo are slim:

Third parties have not used it a lot, some indies did it at launch to differentiate themselves and add an extra feature for their titles. What is nice that after the innovative push done by Microsoft (adaptive triggers) and Nintendo (HD rumble), with Sony following suit these features can be standardised by developers even further as more devices have these next-gen features.

Not really. Astro's Playroom is a 5 hour long game and not purely just a demo. Though it does demonstrate and fully use the features of the DualSense. The reviews for it are actually all round good and is generally well received. MC score here.
Impulse triggers are not the same as adaptive triggers. Impulse is like rumble for the triggers. Adaptive triggers allows for developers to adjust the tension of triggers depending on what they want. There is a already a lot of third party games support the DualSense features as I said before. There is support both haptics and adaptive triggers.

Demos can be five hour long, I have played a few. That was a dig at 1-2 Switch; don't worry about Astro, he got away with it by being bundled.
So the triggers are an evolution of an idea from the competitors. No issue with that, we all know how things can always be refined and evolved.

And when these are incorporated into more devices then the feature becomes an industry standard.
