Why would you even want to travel to a communist country? They would just quarter you upon arrival and then distribute your corpse between the starving population. That's how communism works.
If you demand respect or gratitude for your volunteer work, you're doing volunteering wrong.
How would they know even know that you serve in the army ?
Does your profession even have to be disclosed if you're only doing a temporary visit in Vietnam ? (More importantly how would they even go about proving what your profession is ?)
Well, first of all, Vietnam is as capitalist as it gets, communist my ass. Second of all, several members of my company were in Vietnam for business, it should be no biggie (we're german). Maybe they are not too happy about americans (remember, they had a war), but afterall it's all some time ago.
The biggest problem for you might be the army itself. I know in sensitive jobs (and military is included), people often get background checks. So I don't expect problems for you in Vietnam, but maybe from your superior officers. Dunno though how it is handled in your army.
Besides from that, check the climate at the time of your travel. At some times Vietnam is unbearable hot and rainy.

Okay so it's safe. Now I have to get permission from the Army itself. I don't see why they would say no since I will be in civilian attire as long as I conduct myself in a good manor. What is the rule of religious evangelization in a communist country?
