Considering 65 million 3DS owners find playing games at 240p portably on a small screen 'toleratable' enough to spend money and enjoy the game play experiences they recieve running said device, I'm sure there are people out there that would still play the game and enjoy it on a handheld device even if it means it runs at 720p and has less detail.
If your going to buy it on the Switch to play only the TV most people are probably not going to so, but I can see the appeal if it means getting to play a portable version of the game, that's going to be feature that will sell the game to people on Switch over another platform which lacks this capability.

I'm sure plenty of N-fans would be happy to look past any limitations on Switch. But to be fair, 3DS games were, with very few exceptions, designed with that hardware's limitations in mind, so they rarely mattered on a technical level. Dark Souls 3 is a very precise experience, and trying to squeeze it down on weaker hardware could have significant effects on how it plays, but maybe they'll pull it off!
