This should of been mine but Crash popped into my head first.
Resident Evil.... on PS1.
Its the thing that stands out the most, of my early memories of playstation.
Crash Bandicoot. It defined the early PS1 years when the name was becoming established.
God of war.
Gran Turismo, even though I'm not as in love with it as I used to be, when I saw the thread title and in general when I think PlayStation it's the first to come to mind. Hoping GT Sport will rekindle a bit of that love, itching for a good racer.

Final fantasy. Everyone I knew that had a playstation of some sort constantly talked about it.
this is an opinion from someone who doesn't have a "playstation" history. I own the ps4 and a ps3. I only own the ps3 because it was bought for me but i grew to like their games (the ones i got the chance to try a lot). I own a ps4 because MS made me but I have no regrets it's enjoyable.
