Of the two, I only played Dragons Dogma. I don't know if it holds up without the community but I it. One of the best experiences I've ever had.
I have weird taste, though.

Dragon's Dogma was a a game i expected nothing from and ended up getting a lot. It is awesome
Dogma by far, Tales of Zestria is a huge let down.

I know pretty much nothing about Tales, but DD was one of last gen's best games imo. I'd wholeheartedly recommend it to any RPG fan
Yeah, Dragons Dogma is absolutely nothing like Zelda, though. Watch a couple of reviews and see if it's for you.

I'd argue that considering Dragon's Dogma heavily borrows from other games, and it is inspired by many, there's absolutely nothing like it either.
If for one reason to play Dragon's Dogma over Tales of Zestiria, Dragon's Dogma doesn't have the constant camera issues that Zestiria has. A problem that becomes worst for Zestiria when you fight in narrow corridors.
If it was partly the clambering in the coming Zelda that got you excited, I found the climbing in Dragon's Dogma to work well. Although you can't climb trees, walls and cliff faces. Only buildings, monsters and the occasional rocky platforms.
