They wouldn't have shown anything if they were going to be making drastic changes. I can assure you they wouldn't want to show an inferior version if they knew they were going to improve it significantly.
Also, your comparison seems to contain only texture-related improvements. Some texture improvements can give the illusion of depth, but ultimately they're just texture tricks. (There's also some texture-related improvements that actually create new geometry, but it doesn't seem to be the case here, I don't think.) But it doesn't matter, because in normal gameplay, there don't seem to be many noticeable improvements. They could easily have used a ten-year-old game engine for the same improvements. Effectively, 'current-gen graphics tech' is just marketing spin that doesn't really matter at all.
I don't really mind because to me, the game look OK anyway, but there's no reason they have to use modern technology for the game. It's for their own convenience because they'll be using it anyway and this way they'll gain more experience with it, and it also sounds nice in marketing. And it would also seem that they're not releasing the game for less powerful platforms, so it doesn't even matter if it takes more resources than it has to.
