I wouldn't say any of those games jumped out at me as being "Revolutionary" but I guess i'll have to pick Halo.

Interesting question. I'd say the three most revolutionary games of the 21st century are Halo: Combat Evolved, Grand Theft Auto III, and Wii Sports.
Since GTA is multi-platform, it's down to Halo and Wii Sports. Although Wii Sports turned the industry on its head in 2006, and stands today as the most "killer" of "killer apps" in the history of video games, it's influence has petered out over the last few years. The Wii U failed to capitilize on the revolution that was Wii, and Wii Sports, once a marquee title, has lost its luster. Motion gaming in general, unfortunately, has been more or less abandoned outside of Nintendo.
Then there's Halo, which, along with its sequels, revolutionized console shooters and console online multuiplayer, and influenced two generations of first-person shooters. Its control scheme, weapon inventory system, and focus on militarism has become the standard for shooters. Furthermore, the series is still going strong and, more importantly, its legacy is still going strong.
So I give the edge to Halo.

Isn't that essencially what Rogue-like games are? I always considered the Souls games soft Rogue-like, but brilliant Action RPGs anyway.

I think rogue-like games are not necesarily dark and scary, and the theme does not have to be hopelessness, souls games want you to quit not only through their gameplay, but because of the graphics, sound, lore, the whole atmostphere works psicologicaly agaisnts you.

The other FPS games on consoles during that time were terrible, you have to give credit to Goldeneye 007 for being a great game despite only having 1 analogue stick. Also, Super Mario Galaxy isn't HD, but since Galaxy 2 will get ported to Wii U, it might become HD.

Honestly, Gow 3 was good but nothing spectacular in my opinion. There's much better PS exclusives to choose.

Seriously Ninja Gaiden? That game is absolutely shit. GOW is the best in its genre by far.
