Resident Evil 4.

I've played through it 11 times across GCN and Wii.

3 is my personal favorite.  I'm hoping it comes as a ps2 classic after 2.  

If you haven't yet play 1, not as good as.2/3 but it's a.grrat.game that starts a great series.

I play through Silent Hill 2 and 3 yearly. I also play through Resident Evil 4 every few months to speed run it of just to play through it again, I've probably beat it about 30+ times.

Also Metal Gear Solid 3, Resident Evil 2 and REmake.
