Well, this is (imo) the best FE and also the most newcomer-friendly, so you'll enjoy, no doubt. Don't be afraid to play on casual if you don't like the idea of permadeath.

Glad you went with Fire Emblem. As much as I appreciate BD, FE:A exceeded my expectations for an FE game, rightfully deserving of being one of the best games on the 3DS.

Well I hate saying someone played the game wrong, but you played the game wrong.
Sounds like you just sent units in battle and hoped they survived and when they didn't you grinded them to be overleveled so they could be sent in a frontal assault.
Fire Emblem is "Strategy" game. You need to use strategy. Have supports stand by each other, use magic/bows to fire from distance, use sword against axe, use tanks, and hit and run with others, ect.
Sounds like you did the pay to win and then complained the game was too easy.
Haven't played Bravely Default, but I know Fire Emblem was pure bliss when I played it. So Fire Emblem.

Seriously though, the games are usually known for being brutally difficult to 100%. This goes more for the OP than you (with all respect, I feel like your opinion is unlikely to change on the subject), but Awakening offered a lot of options so newcomers wouldn't be turned off, and the existence of certain classes, weapons, and gameplay options (partnering units usually decreases stats for the unit, not increases them) were introduced for that very reason. The game lets you build your army any way you want, so using the Sorceror+Nosferatu combo really isn't a necessity, even for the harder stages. It really just depends how you build your army, and how you plan your strategy several turns in advance. As a veteran who's completed Hector Hard Mode on Fire Emblem 7 with no casualties, hearing how this game can only be completed with certain units seems a bit silly in comparison.
Anyways, my stance on some of the unbalanced gameplay additions is essentially the same as the Super Guide in Mario/Donkey Kong, if it's not necessary, I don't feel the need to complain about it.
