I could not agree more.
There are enough games out there with a focus on multiplayer and coop (with proportionality shrunken and compromised single player experiences) that I am perfectly happy for some games to simply focus on what they do best. i.e. crafting a fantastic, interesting or unique single player experience.
For example multiplayer Metroid personally doesn't work for me and any time someone decides to try and add a multiplayer mode to a Metroid game I would just wish for them to spend that same time further tweaking and refining the single player experience.
Having said that a three player co-op Pikmin might have made alot of sense given the structure of the game. Was it never planned or so it something that didn't make the cut in the rush to make the release deadline? Who knows.
A well implemented coop might have further elevated a Pikmin game but I don't see it's absence as something that necessarily warrants decreasing its score. Missing multiplayer in a FPS would be another thing entirely.
