Best Of Each Genre

What games do you consider the best of the best for their respective genre's? You can list as many genre's as you want. Please try to limit each genre to only a few games. (Or this thread would be pointless) My choices are below:

Platforming: Donkey Kong 64 & LittleBigPlanet

Racer: Mario Kart 64

Shooter: Call Of Duty Black Ops 2 (for zombies)

Survival Horror: Resident Evil 2 & Resident Evil 3 Nemesis

Adventure: Luigi's Mansion

Party: Mario Party 3

Simulation / Life: Animal Crossing (GC)

Strategy / Puzzle: Pikmin, Pikmin 2, & Dr. Robotnics Mean Bean Machine

Turn-Based: Pokemon Gold/Silver, Paper Mario(64), & Paper Mario Sticker Star

Fighting: Super Smash Bros Brawl & PS AllStars Battle Royale

Sports: Mario Tennis 64 & Wii Sports Resort

I think you mean Genre "Defining" not "Defying", Defying means to go out of the genre.

OMGWTFBBQ!!!!! Get out of my head. When I saw the "defying" in the title the first thing that came to my mind was Valkyria Chronicles and how it turns traditional Japanese SRPG Genre on it's head.
