What games do you consider the best of the best for their respective genre's? You can list as many genre's as you want. Please try to limit each genre to only a few games. (Or this thread would be pointless) My choices are below:

I think you mean Genre "Defining" not "Defying", Defying means to go out of the genre.

it makes a huge difference though, I was going to say something like Valkyria Chronicles and Borderlands, they both defy the norm of their respective genres.

OMGWTFBBQ!!!!! Get out of my head. When I saw the "defying" in the title the first thing that came to my mind was Valkyria Chronicles and how it turns traditional Japanese SRPG Genre on it's head.
