They did. We're no longer in launch week. And more shipments have reached stores by now.
in stock at gamestop? and so what?
Wii U is not the Wii (like 3ds is not the ds; or ps3 not ps2), and it didn't launched with something like Wii Sports; still it can be good successfull machine.
ps3 debuted just with 197K in november 2006 in US; 360 started with 326K (NPD monthly data).
making big conclusions bout success/not success based on "wii u in stock" NOW is absolutely stupid.

Wii know ;)
I can't help but smile at the thought of scalpers losing money on their multiple Wii U's.

VGChartz
It just launched yesterday in the UK and Amazon UK had both the premium and non-premium consoles 'in stock' last night

My prediction threads:
Wii U will sell under 40m units (made on 14th September 2012)
PS Vita will sell under 20m units (made on 30th September 2012)
Wii U will sell under 7m in 2013 - I was right
Sweet. Now I am certain that it was a good thing to cancel those preorders.
So what's the right answer?
-Wii U sold out: That's because Nintendo is holding out on supply to create a fake demand. Nintendo sucks.
-Wii U in stock at some retailers but not Gamestop: Gamestop is full of shit. Nintendo sucks.
-Nintendo resupplies after Black Friday: I can buy a Wii U. They'll sell more than 400,000 consoles. Nintendo is doomed.
What scenario would make the Wii U a success!?

This is great news for families who want to buy one before the holidays.
They have some bundles too, but they don't seem to be very good deals. Leave it to GameStop to provide a bundle that costs exactly what each item would cost when added together. Isn't the point of a bundle to save a few bucks?
