Not a bad set of predictions, but I'd make a few amendments: 

iPhone - I doubt it will have an A5X, those things are physically huge. The only reason they exist is so quadrupling the pixels in the iPad 3 wouldn't kill performance too hard. We might see an A6 or a clocked up 32nm A5. NFC is also up in the air, with indications that iOS has software for it, but well-placed sources saying the hardware doesn't have it.

iPod - supposedly getting the same screen as the new iPhone. Who knows, might get an SoC to match. If iPhone does get NFC, no reason not to sock one in the iPod, too. It's cheap tech from what I understand.

Apple TV - I doubt it. Current one is only 6 months old and todays lineup is crowded enough. No new Apple TV and definitely no controller for it.

iPad Mini - Lots of credible chatter about a 7.8" 1024x768 cut-price iPad targeting the education market. Should have a 32nm A5 like the current iPad 2, a price under $300, and may cut out a few minor features like cameras.

A surprise - Probably something software and/or service related, simply because those are the only secrets Apple can keep anymore. Last year it was Siri.

ipod touch is supposedly using the 32nm A5 introduced in the recent ipad 2's as well as the apple tv. The screen might be the same size and resolution, but it will still be inferior to the iphone one. The iphone screens are also IPS, while the touch ones are not. It's why colors look better on the iphone and you have better viewing angles as well. (compared to the ipod touch)
