I really don't know, sorry.
But since it's a popular game, shouldn't be hard to find a mod community on the interwebz - there should be plenty

If I've never played FF or any serious JRPG, would FF7 be a good starting point?

Yes, if you don't mind the dated visuals (hopefully this new version will have them enhanced). Chrono Trigger (DS or SNES emulator) or Xenoblade Chronicles (Wii) are both pretty good starting points too.

Nah, you'll become one of them Final Fantasy 7 zombies who only like Final Fantasy 7 cause the other 15 games aren't like it.

This question has been answered by a lot of people using the wrong criteria (is FF7 good) without consideration for the proper criteria (would you, Soleron, enjoy it).
For the first criteria: Yes, it's a good game.
For the second: No, you will hate this game and it will poison you to all Final Fantasy for all time.
For real RPG introductions, you should play EarthBound through entirely legitimate means because to do the quicker route and use an emulator would be highly illegal; it includes many elements you will find more enjoyable, including a more grounded combat system, better (or at least quirkier) music, and writing that will appeal much more to your sense of storytelling.
For Final Fantasy introductions, pick up FF4. You will very likely hate all of them, but if you try FF2u/4j then you will stand the best chance of enjoying that one.

No, PS1 games look like shit.
Might as well try FF6 on a gameboy emulator
