I'd say Chrono Trigger, most people I know that are not into RPG always enjoy it. Also a lot of friends of mine that like Zelda liked Terranigma too, but it will be very hard to find.
If I have to choose one RPG for some of the systems you have, then it would be:
DS - The World Ends With You
PS - Final Fantasy IX
GBA - Golden Sun (and Golden Sun: The Lost Age)
GC - Tales of Symphonia
PS2 - Dragon Quest VIII
PS3 - Valkyria Chronicles
360 - Tales of Vesperia
Wii - Fire Emblem: Radiant Dawn
Why don't you make like a tree and get out of here?

- Infinite Space on DS
- Get the Witcher 2 on 360, release in May.

Fable -- not at all. It's nice to know the history and it obviously makes the game better, but it isn't required in the least since they aren't that connected. If you're going to pick and choose I would say Fable 2 is the best (and make sure you play good).
Mass Effect - You want to play both.

Then Mass Effect and Fallout 3 are the games for you.
Well if you want to go old school you cant go wrong with Chrono Trigger or Final Fantasy 6 both for the Snes though chrono is on the ds and ff6 was also on gba if you cant find them try downloading an emulator to see if you like them as they are worth it. The ps1 has also plenty of rpgs, Chrono Cross and final fantasy 8 are among my favorites. And the DS has also a massive amount of rpgs but The World Ends With You is hands down the best. For the GC Baten Kaitos is pretty good and I could continue but it would take too much time and I have to go play Chrono Trigger.

Correct me if I'm wrong, but I believe The Witcher 2 is only confirmed for release on PC in May. No release date has been announced for any console version.

I'd suggest Earthbound first and foremost because it's a classic and it's crazy and awesome. So I guess that would count as the classic JRPG I'd suggest.
And then to get a full spectrum of games I'd suggest Persona 3,4 for the JRPG/dating sim, Valkyria Chronicles for the new take on SRPG, Final Fanasy Tactics for an old great SRPG, Demon's Souls for an Action RPG and the most interesting online implementation I've ever played in an RPG, and then I get a bit stuck thinking of a fast paced Action RPG you should try but the Kingdom Hearts series fits the bill pretty well.
