Ho-Oh took me a long, long time. Don't recall exactly how long but it was incredibly frustrating. Cyndaquil took almost a week of restarting (not all at once of course).

How did you get so many? I think I barely saw like 6 or 7 shinies during all my playthroughs in all Pokemon games XD

Do you have a Chikorita, shiny or non-shiny? That's the only Johto starter I need to get and I haven't found anyone with one, or who wants a lvl 1 Totodile for it xD
