It's not so much about Linux itself. Linux is just proof of concept that you can run any software.
The hacking itself allows for broader usage of your device. For instance on the DS I used homebrew to add calendar, notepad and music player - things that Nintendo added for 3DS. You could add an Android-layer and get every Android app, as long as it doesn't use phone specific stuff. But internet is possible with the switch, so many useful apps could be ported.
