I can't speak for Android/Chrome, but they do include iPhone/iPod Touch browsing under Safari.
It's worth noting that Net Applications recently changed their estimation methodology, granting a lot of extra weight to developing countries. This had the effect of cutting their OS market share estimate in half for non-Windows operating systems, for example. Alternatives to Windows and IE are doing a lot better in developed countries than this market share suggests, and those developed countries are what drive the tech trends.
