Well, GG has said they wanted realism and both options you have given are not exactly testament to reality.
Just keep playing it a couple of times. I managed to get the hang of it rather fast, and I suck at shooters.
The things that make CoD4/5 spray-friendly has nothing to do with the controls:
- Small maps: This right here is a killer itself. It encourages automatics and discourages ironsights.
- Lack of recoil: When the main thing that's supposed to keep autos in check isn't there, they'll run rampant.
- Low health: Combined with the other two issues, this will add to the problem. What it means is to get a kill, all you need to use any automatic then spray away and wait for 2-3 bullets to hit (and they will easily as long as you're not drunk). No effort needed.
The fast ironsights movement just added a little more to the problem, but it's nowhere near to being the main reason why CoD4/5 are so casual-friendly.
I played the demo 3 times. Now i'm used to how it controls it feels great. You just gotta give it a chance.

Exactly and this applies to every game out there. All games have different gameplay mechanics and encourages you to learn how to play the game. Once you master the controls, you play like a pro.
Remember the first time you played your favorite game and how much you struggled with the controls?
I believe it's the acceleration of the movement. It starts out slow and then eventually speeds up and that's where the sluggish feeling comes into play. It's something you have to get used to.
I agree with KylieDog. I don't like the way it speeds up the aiming the longer you hold it in a direction. I played the demo 3 times and I've gotten used to it, but it breaks the realism factor for me because in real life I don't start turning my arms faster the longer I'm turning. When you're aiming close to an enemy it's a hassle to get right on them (I like going for headshots regardless of the game) and Killzone 2's aiming mechanic just makes that a tedious and dreadful process. I'll keep playing it though as I really want to like this game and find everything else about it to be top notch. Hopefully it finally "clicks"
I've been playing FPS's since Doom so it may be that I'm really used to quick movements or "twitch" aiming. I wasn't a fan of COD4/5 as it just felt too easy and streamlined. I was hoping that Killzone 2's aiming would play a lot like the original Rainbow Six 3 on the first Xbox. That game is still my favourite tactical shooter on a console.

Ah, that game can be difficult. You'd have no idea where anybody is and suddenly BOOM, you're dead. People can take their precious crosshairs and auto-aiming and shove it when they play that game.
There's a source engine mod called Insurgency Mod that's kind of similar. You can die in very few shots and you're weapon isn't in a fixed position so there are no crosshairs.
First time I played the demo my character movement seemed sooooo slow. I was not used to this speed at all.
By the time I got around to playing it a second and more importantly a third time the controls felt absolutely awesome.
I later found out L3 makes me run, lol. I never ran in 4 playthroughs. No wonder my first play through took 16:34. 
I am still trying to get accustomed to the aiming but to be honest I love it. I also love the weighted feeling, no more floating!
