Lot of great picks here!
I would agree with the likes of Killzone 2/3, the Ratchet and Clank Future series, Bioshock Infinite, Mirror's Edge, etc.
I'd also throw in Puppeteer:

And Forza Horizon 1:

FPBP. Last of US PS3 still looks very solid.
I gotta recommend Punch Out Wii for this. Despite how weak the Wii was the stylized graphics still hold up very well which makes me wanna see a new one since a new Punch Out from Next Level Games that takes full advantage of the Switch 2 could genuinely be one of the most aesthetically pleasing games of all time.
I will just throw Metal Gear Solid 4 in there since it surprisingly haven't been thrown yet.
And Super Paper Mario too, because it's physically impossible for Paper Mario graphics to not age well.
From my experience I’ll say:
Heavenly Sword
Uncharted series
LittleBigPlanet series
Bayonetta
God of War 3/Ascension
The Last of Us
Gran Turismo 5/6
Metal Gear Solid 4
Beyond Two Souls
KillZone 2 and 3
Bioshock series
Flower/Journey
Batman Arkham Asylum/City/Origins
Enslaved Odyssey to the West
Resistance series
Ratchet & Clank Future series
Resident Evil 5/6
Sly Cooper Thieves in Time
Grand Theft Auto 5
Rayman Origins/Legends
Puppeteer
Tekken 6
Dante’s Inferno
Prince of Persia The Forgotten Sands
Tomb Raider
DmC Devil May Cry
Dead Space series
Honestly, many PS3 games released holds up beautifully still and only need a bump in resolution and 60FPS to coexist perfectly today.

Another one I feel doesn't get enough love is Project Gotham Racing 4, it holds up insanely well despite being an early 360 title

Okami
Muramasa: The Demon Blade
Super Paper Mario
Kirby's Epic Yarn
Basically any game that didn't chase highest fidelity and instead went with an unique art style aged much better than the rest.

Lovely looking games, but isn't Okami 6th gen and the rest 2D?
Mirror's Edge
Uncharted 2 and 3
Killzone 2
Tekken Tag Tournament 2
Bioshock trilogy
GTA5
Valkyria Chronicles
PGR4
God of War Ascension

Metal Gear Rising: Revengence
Castlevania: Lords of Shadow
DMC
Gear of War
Resistance 2 & 3
Resident Evil 5 & 6
The Evil Within
Dead Space 1, 2 & 3
Dishonored
New Super Mario Bros Wii
Mario Galaxy 2
Minecraft (before I get criticism I like to say the art direction is timeless)
I wanna make a list but it'll be wayyyyy too long. Most big 7th gen games still visually hold up today for me personally. I'll only mention games that haven't been mentioned yet. The Obvious ones for me would be FF13, TLoU, MGS4, Mario Galaxy & Kirby's Epic Yarn. But they have already been mentioned.
I have (or have/had in the household): ZX Spectrum, Commodore 64, Amiga, NES, Sega Master System, Super Nintendo, Sega Megadrive, Gameboy, Playstation, Nintendo 64, Windows 95, Gameboy Colour, Windows 98, Sega Dreamcast, Gameboy Advance, PS2, Gamecube, Xbox, Windows XP, Nintendo DS, Xbox 360, Wii, PS3, Windows Vista, iPhone, Windows 7, 3DS, Wii U, PS4, Windows 10, PSVR, Switch, NES Mini, SNES Mini, Zelda Edition Game&Watch, PS5, PSVR2 & Switch 2. :D
and I Don't have: Magnovox Odyssey, Any Atari's, Any Macintosh computers, Sega Gamegear, Virtual Boy, Sega Saturn, N-gage, Xbox One, Xbox Series X/S, PSP, PSVita & Andoid Phone. Plus any non-mainstream consoles/platforms I haven't mentioned.
