As some others have done, if I had to narrow it down to just one per console, I'd probably go with:

Dreamcast: Soul Calibur
PS2: Okami
Xbox: Ninja Gaiden Black
Gamecube: F-Zero GX

I figured from the resolution that they were probably at least emulated, it's nearly impossible to find good quality images of the Gamecube version. 

Thankfully, there's some reviews and such still on YT:

Somebody remind me to take a picture of RE4 running at 480p to my BVM when I'm on vacation in late May. With good phosphor glow and solid blacks, from a CRT, RE4 looks fantastic on GC, so long as you have Component or Scart Cables. 



Project Justice on the DC. Set your screen and youtube to max size/resolution for this. Excellent footage of what 480p on a CRT looks like, when using VGA, Scart, or Component cables.

I'd never actually heard of that one before; I feel like a lot of Dreamcast games with that signature colourful arcade style and high framerates have aged well:

Dreamcast is an excellent console to collect for. Lots of games have aged extremely well because they are just arcade ports of great pick-up and play games. Some people complain that the system is finicky to get working, but as long as the GDRom Drive and PSU have both been recapped/calibrated its good for 30 more years. Tons of fantastic indies for the system now that are on stamped (not burned) CDs.
