But bigger on consoles, and again..i ment GTAVI not minecraft, so again explain why GTAVI releases a year(or so) before pc?

Why did GTA IV and/or V never get a Switch release? No idea, I can't speak to internal decisions for a company I don't work for. I can wager a guess that PC has a wide range of hardware which makes it harder to optimize, while ps5 is a single unit. Given the scope of the game, and the debt they take on during the development (billion-dollar budget), they focus on one piece of hardware for optimization in order to get to market fast as possible, to recoup costs, then spread out from there. My best guess.
The other explanation is some companies, like Square, haven't figured out the market has changed. It isn't 1995 anymore. Granted Square seems to have finally figured out being ps5 exclusive is stupid and killing their business.
In general, I am not shocked (some) games sell better on consoles. A given console has a few hundred games. PC has over 120,000 games.. not including emulation. Way easier to stick out on a console that has a small fraction of the library PC has. Add in PC has far superior BC, meanwhile how many Wii U games work on the S2? None? Of course consoles gamers are hurting for games. Also, PC has ultra settings, so when someone upgrades their rig, not only do their old games work, but they look and perform better.
There is nothing consoles do better than PC, other than being cheap. Everything else is better on PC.
