It sounds to me that TVs or computer monitors are at 60/120/144 Hz, but I have seen TV 4k at 600 and 1200Hz of fluidity, How is that?

Those are not true refresh rates on the TVs. Can't be done yet.
...to avoid getting banned for inactivity, I may have to resort to comments that are of a lower overall quality and or beneath my moral standards.
Those are interpolated frames. Like inserted frames. Its for smoothing out motion but can add artifacts and can look unnatural (soap opera effect).
Its marketing if anything. Like dynamic contrast that goes into the millions on edge lit LCD TV's/monitors. That takes the highest contrast level to the lowest, its misleading and in no way a replacement for native contrast or frames in this case.
Native refresh rates max out at 120hz on TV's. You want to look out for HDMI 2.1 as a specification as they are capable of doing 4k at 120hz.

I am guessing you was looking at a Samsung TV and while it might say HZ on spec sheet, it really being calculated by Samsung CMR formula which uses
Frame Refresh Rate
Image Processor speed
Backlight technology
to come up with the number.
https://www.samsung.com/ca/support/tv-audio-video/what-is-cmr-clear-motion-rate/
So that 1200hz is calculated completely different then the number other tvs are using.
I don't think that means what you think it means.
But regardless do not use frame interpolation on your TV at any setting. It's bad and looks bad and always looks bad.

Stick with 60Hz.for tv and 30fps for gaming.

600Hz doesn't look bad on plasma, though the 120Hz/240Hz soap opera effect on LCD/LED does look terrible.

If something is filmed and made to be played at an extreme refresh rate then sure. But as others have said, 600hz in TV's aren't showing 600 images per second, it's a marketing thing referring to other components.
But regardless of screen, interpolation never looks 'good' it's wonky and almost cartoon like as the media wasn't made for it. If it was filmed for it then sure but if not leave it as intended, is just my opinion on it.

Is 100 hz tv good for gaming 4k, and is there a difference between 200 hz?

They are correct that it's not true 600Hz, but I've had more than a few friends and acquaintances point out how much smoother my TV is without knowing it's capabilities. I will admit it doesn't work great for films. Not that it's horrible but it certainly doesn't help. Depends on how many screen types and equipment you want to have or can afford for every particular viewing scenario.
