I started a 2nd playthrough once I got the DLC (on December). Master mode has slowed me down, but so far so good. I still need to get the Master Sword for the trials, only finished 2 Divine Beasts so can't start the newest DLC, and haven't found any Gold monsters. So I'm not the best to person ask yet I do like the enemies on flying platforms a lot.

Same as you in started over in master mode now with having just purchased DLC. Having had not played this game since like a month after it came out when I quit playing it, I remembered again why this game is so amazing playing.
But wow does Master Mode make you play different. Like I'll be running along and see an enemy camp and be "aw hell no, not going near that"
Just had a mission recently that had to clear out a camp near the beach. Went in and stealth killed 2 guys, and with a stealth starter on a white guy, managed to kill him before others arrived. THen ran and hid. then scouted camp and looked around for help. No iron block, no big boulders to roll on them, no help whatsoever. While I was disapointed in that fact, it made me appreciate this difficutly. In normal mode I woudl just rush up to camps and kill without care. You can't do that. The enemies take a beating, not ot mention they still freaking one shot me.
I imagine if I upgrade my armore to like lvl 3 or 4 and have like 20+ hearts that I can be more reckless, but I do love the wariness this mode has me in. It makes the world feel more real. Too many games the enemies are too freaking easy that it makes you think wtf can't the npc just kill all these guys and save themselves. On Master Mode, there is no questioning that. The bad guys are tough, and toss in the blood moon and I'm surprised the world isn't already defeated completely.
BTW, have yet to even bat an eye at a Lynell. I know what would happen. If I see them, its a wide birth I take around them.
The balloon enemies are cool in that it makes the world seem more interesting, but they are cake walks. They are about the only enemies I go out of my way to kill. Usually one crit in the arrow knocks them off their plateau to their death and then you magnet the chest to you, or just pop a balloon and they die, ect. Cool concept, but definitely doesn't rate the challenge at all. Plus you lots of times get better loot from that chest than any of the chests at enemy camps, so it feels like game would be harder without them in the game.
But never 100% the game first time, so finding some new cool things this play through. Like there was this old ruins just north of the lost woods that I never did the first time. That was cool. Though had to fight my first Hinok in Master Mode there. That resulted in a fair number of deaths. 4 hearts against him means OHKO easy. Hell I swear I died a couple times by him just bending over. Not butt stomping me, no hitting me with his hand, with a tree or nothing, just bending over and his belly squishing me, lol. Only annoying part about that fight was when I died, all the torches I lit were unlit. Had to go around and relit the whole arena again before fighting him. Tried saving after that, but still when died they were unlit. Then after beating him tryign to find my way out of the ruins was a bitch since all the lights were out and had no path. Yes I could have teleported, but I dont' like to, and also when I looked to teleport after being in there for way too long I noticed my nearest teleport spot was super far away and I wanted to do more stuff in this area.
Have yet to do the new DLC stuff. Only the Master Mode. Well got eh Korok mask, but that's it. Still haven't done the Master Sword Trail or the new dungeon/shrines/ect. Oh and I acutally did find it fun wearing the Switch t-shirt on the Plateau.
