Because they are both overpriced? Move controller costing more doesn't make the Joycon price somehow reasonable simply because it isn't quite as overpriced.

I think it was during its second holiday season I got it. It came with Fifa but I traded that shit it.
Have any changes been made to the move controllers since they 1st launched, or is it still the same architecture today?

The system comes with a pair but its 100% optional to get any additional Joy-Cons. The only reason you would need them is for local-multiplayer.
Also worth noting that for alot of multiplayer games on Switch, a pair of Joy-Cons will actually act as two controllers so in order to play a 4 player games you need to spend an additional $80 which is like $100 cheaper than paying for 3 additional PS4/XBO controllers to play 4 player local multiplayer.

Wii Remote Plus & Nunchuk costs $60
A pair of PS Move controllers costs $100
The HTC Vive controller costs $130
The Oculus Touch controller costs $200
A single Joy-Con for $50 and a pair for $80 is absolutely reasonable compared to other motion controllers on the market.

I think it's a fine deal.
For the Wii, I had to purchase 3 extra wiimotes to get 4 player fun. That cost me a fair amount.
For the switch, I seemingly only have to purchase 1 pair of Joycons for $80. With that one pair, I will be able to play many games like Mario Kart in 4 player and yet also be able to have 2 people play ARMS with a joycon in each hand. And then purchase 1 pro controller for the solo big games I play.
Don't see the need to ever get more than that.
But at the moment I have no plans to purchase anything. Will try out the joycons for Zelda first before I spend money

Well, yes. Compared to other controllers it is, but by itself I still wouldn't pay $80 for a pair of them. Like I said, other controllers being even more overpriced doesn't make the somehow not overpriced as fas as I'm concerned. It's just a little less overpriced.
