It might be just a rumor, but I think this scenario is very, very likely to happen. Leaving Zelda as a WiiU exclusive would be kinda silly.

Actually there is nothing in this rumour that is unexpected, NX coming this year and Zelda U port are both very expected things.

Unbelievable!? Maybe just for you beacause you are 100% (unreasible) confident that NX doesnt come this year and there will not be Zelda U port for NX.
This is very probable anyway, anyone could have come up with this rumour (actually, everyone already did). Nintendo should do this, I hope they don't waste Zelda U's potential.
I think the only thing that would disappoint me is that the delay to Zelda U was because of NX. I really think that Zelda U in 2015 could have been the megaton the Wii U needed. Wii U could be looking at 20 million sales and climbing if they launched Zelda U when they said they were going to. Then they wouldn't have had to rush out NX until late 2017.
This could be a rumour, but I'm very confident that this is going to happen.

I think NX is definitely one of the reasons why Zelda U was delayed, but Nintendo certainly will not seat on game for whole year and doing nothing, you can bet that Zelda U will be more polished game with more content in that huge world, than it was released in 2015.
Wii U ended 2015. with 12.5m, its very unrealistic expecting that Zelda U would move that number to 20m consoles when Mario Kart 8 and Splatoon managed to hold sales of Wii U at around 3.5m for whole year. With Zelda U launched in 2015. probably Wii U would end up somewhere around 14m instead 12.5m.
