Ikr? It's my absolute fave game XD I originally got the game on sale at GameStop and bought it since I read about it in a World Record book and was like, alright I'll try it. Was completely blown away with how amazing it was :3 then I quickly realized how few people actually played it. And I agree, this is my fave DQ OST closely followed by DQ6 

Banjo-Kazooie. Not a lot of songs, but I love pretty much all of them.

It's impossible for me to choose! There are many amazing OSTs out there, including Final Fantasy IX, Super Mario Galaxy, Xenoblade, Super Mario RPG, Paper Mario TTYD, Sonic 3 & Knuckles, Mega Man 3, Super Metroid, Castlevania: Dawn of Sorrow and many others! Impossible, I tell you!

Lost Odyssey is an other masterpiece from Uematsu.

One of the best battle theme ever composed:

And this theme... So much feels during the sequence that accompanies it.

And finally this one, which encapsulate one of the main reason I've always enjoyed Uematsu's compositions. I really like the fast arpeggios he's famous for:
