I'd rather it be like the first game personally. I thought the first was actually challenging. They're all great games though.

After replaying the first game somewhat recently I can confirm that it is no more challenging than the other two. It just seems more difficult in retrospect because no one had ever played Pikmin before at the time they first played it.
Actually, the Challenge maps in 2 and 3 present far more of a challenge (go figure) than anything in the first game.
Oh, right, the actual topic. I think it's impossible to say at this point. NX could launch in 2016 or 2017. It could be a handheld or a home console. If it's a handheld launching in 2017, the Wii U successor might not be coming until 2018 -- in that case, I think there's a good chance Pikmin 4 shows up on Wii U. Miyamoto is working on Star Fox right now, so I suppose development of Pikmin 4 might start later this year, if it hasn't already.
If Wii U successor is coming in 2017, I'm thinking that's where Pikmin 4 will be. It's possible that development has already started, since EAD 4 hasn't exactly had a lot on their plate since it launched (only Mario Maker is announced from that studio, which pumped out NSMB2, NSMBU, NSLU, and Pikmin 3 and its DLC within a year and a half). I would expect Miyamoto would want to oversee it, though, and it seems like he'd have his hands full at the moment with not only Star Fox but Giant Robot etc.
Of course, he's also working on the Pikmin shorts. Pikmin being sort of at the forefront of Nintendo's new cross-medium promotion strategy seems significant to me. It's clear the series is very important to Miyamoto. In the end my vote is for Pikmin 4 on Wii U. I think Miyamoto feels about Pikmin 3 the way Retro felt about Donkey Kong Country Returns. Sort of like he didn't quite get to finish what he started.
