Pretty much impossible choice, but it'd probably be between Assassin's Creed 2, Darksiders 2, and any one of the Final Fantasy games before IX.

Also Pokemon has a pretty memorable soundtrack.

A video game soundtrack is great regardless of when the game came out!

Agreed. After playing lots of this game, I had the soundtrack in my dreams! So-- It was the soundtrack of my dreams! I woke up a happy dude.
