Very good question. I prefer GTA on PS Consoles since I've always played GTA on PS consoles but one of my few gamer friends is getting it on 360. I dont usually like online gaming and rarely play games online, but that's mostly because my real world friends don't play and I hate playing with randoms. If the online seems fun i may switch just to play with my buddy. If not, PS3 it is. I'm currently at an impasse for what system ill pick it up for. We'll see.

There is always a lead platform. Even if the developer says otherwise. But I think we will never know which one it is for GTA 5. It wouldn't surprise me if Sony paid some serious money just for that Playstation buttons to appear in the trailers. 

I'm not sure yet, I was originally waiting for a PS4 version. But I don't think I can resist once the game hits the shelf. So I think I will get it for PS3. I just play mainly on that console, so... But I don't think there will be major differences anyway. We're talking about Rockstar, they make shitty ports exclusively for PC. :P

PS3 because I don't have a 360. I made the huge mistake of not going kulitiplatform this gen and will not be making the same mistake again next gen. I have both preordered and fully paid.

PS3 but i don't have Xbox 360 at all, so it's easier for me to choose.

Sometimes it is significant... But I will certainly read their demo analysis to see if there is a big difference and if I wait until after launch, then I will check.

But as you say, by this point in the generation, everyone has worked out how to make a decent PS3 port so it isn't as important as it was a while ago
