I agree, games should be available on all platforms. I'm pretty happy, that everyone can try out Resident Evil:Revelations in May, thats the way to go.
How about we get some Vita Monster Hunter and some PS3 monster hunter first

PS3 MH exists. Just not outside Japan.

The suggestion was to show the west loves Monster Hunter by releasing in on PS3 and Vita it would have a better chance to show its popularity.

better chance? I don't think so. 3DS is more popular in USA than Vita and MH don't sell well on consoles, so...

No, MH is not popular outside of Japan generally. I think the west will prefer the WiiU-version over the 3DS-one - we will soon see if I'm right on this. So it makes sense to support PS3 and X360 too. But the point is, Capcom has pretty good relationship with Nintendo recently and MH3U is only on WiiU and 3DS - so if MH4 comes to home-console the WiiU will be the most likely platform.
I am not suggesting abandoning Nintendo but Sony fans do support Japanese style games pretty well. The sales for Ni No Kuni should suggest that.

Oh no, I'm not suggesting Capcom should avoid other platforms than Nintendo. But the thing is, that so far MH4 exists only for 3DS, and I wouldprefer a home-console-version. WiiU seems at the moment the most likely platform for a port of MH4.
One reason is the gamepad. Capcom said for Resident Evil:Revelations, that they are taking Off-TV-play serious, since they heard the story of japanese taking their wiiU to the train to play on the gamepad. It's pretty much used as a pseudo-handheld. The time they use on public transportation is a big reason for japanese to prefer handhelds. And as MH is most popular by far in Japan, that is very important for the game.
