PS3: The 6 you mentioned plus Uncharted 2, and the 2011 and 2012 Call of Duty. FIFA 11 and Final Fantasy XIII might make it in 2012, but I doubt it. Uncharted 3 should make 5 million by 2013 as well, but I'm not sure if it will do it by the end of 2012.
360: The 11 you mentioned, plus Kinect Adventures (which you didn't include, despite it still being a game with 1,000 achievements), plus Forza Motorsport 3, the 2011 and 2012 Call of Duty, Gears of War 3, Forza Motorsport 4, Kinect Sports and I'm fairly confident at least 1 Halo title will make it (343 Studios did promise a Halo every year, so if one doesn't come out this year, one will in 2012 fall). Red Dead Redemption and Assassin's Creed 2 might break 5 million as well, but I'm skeptical. There will also likely be another 5 million plus selling Kinect title by then, but nothing is confirmed.
So 9 total for PS3, and 19 for 360. However if GTA V comes out, add one more to both lists.
Also, because I can:
Wii: The 16 games already over 5 million sales, plus Link's Crossbow Training, Donkey Kong Country Returns, and The Legend of Zelda Skyward Sword. Pikmin 3 will probably come close, and I bet Nintendo will release another 5 million plus selling game, but for now nothing is confirmed. There will also likely be a Just Dance 3 either in 2011 or 2012.
So for Wii at least 19, maybe 21.
At the end of this gen, I think Wii will have the most 10 and 20 million plus sellers, but 360 will have the most 1, 3, and 5 million plus sellers.
