I want to buy a co op game for the Wii but I don't want it to be online only I want it to have local Co Op.

Well, Super Smash Bros. Brawl's Subspace Emissary campaign is coop. It's good because it's Smash Bros, and I need not say more

Also, New Super Mario Bros Wii, because jumping on your partner's head when he's above a cliff never stops being hilarious.

Could I trouble you for some maple syrup to go with the plate of roffles you just served up?

Appart from NSMBW and SSBB already mentioned, I recommend you look into Trauma Center series like New Blood or Trauma Team (if you are in America). And for WiiWare Art of Balance.
