You can easily weave in and out of The Witcher 3 over a few months, people act like it's some gargantuan task but it's actually designed with little sessions in mind to and works really well if you dip in for small sessions a few times a week. You don't need to devout hours and hours to get the core out of it but you do need to make sure your difficulty setting is challenging you enough to make the systems come together cause the game is substantially better when you need to prepare for fights, Monster Hunter style. Just expect to get sucked in regardless, it's a matter of your own will power, not the design of the game being something you need to play for multiple hour long sessions.
It's really not a sweaty game. I'd go as far to say Mario or the new Zeldas are sweatier.
